Powder mixture for preparing original chocolate "gourmet" popcorn (with a chocolate-sugar crust), which is used only in special caramelizers.
Ingredients: glucose syrup, fructose, sugar, cocoa powder with reduced fat content 11%, emulsifier: soy lecithin, chocolate powder 2.4% (sugar, cocoa mass, cocoa powder with reduced fat content), chocolate aroma, acidity regulator: calcium lactate .
Nutritional / Energy value per 100g: 1602kJ/381kcal, fats 4.4g, of which saturated fatty acids 1.7g, carbohydrates 80g, of which sugars 36g, proteins 2.6g, salt 0.03g.
Instructions for preparation : put 1100 ml of water, 1 bag (2000 g) of the Chocolate Corn Mix powder mixture, 1420 g of sugar, 355 g of coconut fat into the caramelizer and heat it in the machine to approx. 140°C, with the cyclic mixing on, and cover with a lid. After about 15-20 minutes, when the chocolate glaze is formed, pour about 65 L of popcorn into the caramelizer and let it mix for about 1 minute. After mixing, we empty the caramelizer and proceed further according to the type and technological procedure of the given production equipment.
Storage: in a dry warehouse up to +20°C, protect from direct sunlight.
